SWEET CHICORY WITH HONEY AND ORANGES

I have never been a fan of chicory as it can be very bitter at times, if I would eat it that would only be as an filling to a sandwich or a salad. Until my mom and I were very hungry but literally the only thing in the fridge was chicory. We decided to try and make something of it and hence after combining our knowlagde and inspiration found online - a sweeter twist on chicory has been created. 
I know it might sound scary but trust me, it really is delicous. Now we often serve it when having guests and we always get questions on how is it made :) . 


It is quick and easy recipe. Chicory is not only nutritious but it is very healthy food. It speeds up digestion and has positive impact on the functioning of kidneys. Prepared with honey and oranges it is perfect as a side dish or a quick snack during the day.

Ingredients

  • 4 chicories
  • 2 tablespoons of clarified butter
  • 2 tablespoons of honey
  • 1 orange
  • pepper
 
Preparation

1. Melt clarified butter in a pot.
2. Cut off the ending of chicory and slice it into quarters, later add it to the butter.
3. Add pepper to taste and cover it.
4. After 2-3 minutes add a little bit of water and continue to stew the chicory.
5. As it softens add honey and diced orange.
6. Stew for another 5 minutes and Bon apetit!
