Gluten and diary-free cornflour pancakes

Yes. I am an admitted pancake-lover - I simply cannot survive without them. I mean, I can, yet I love myself (or at least try to) to much to deprive myself of them. However, as I decided to exclude gluten from my diet in order to help my digestive system recover from numerous ailments, I am not able to indulge on these delicious white wheat pancakes anymore. I used to feel sorry for myself, until I tried them made with cornflour and my grandma's house. They were DELICIOUS! Actually - though I am not sure if it was not caused by a long pancake rehab - I think they are even better this way. So, if you are non-gluten eater and you thought there is no hope for you - this recipe comes as a rescue! Let me know in the comments how you liked this variation of one of the best dishes in the world.

Ingredients

2 cups cornflour
1 cup water
1 cup almond milk
1 egg
1 tbsp oil (I used flaxseed oil)
1 tsp sugar
pinch of salt

+ oil for frying

Preparation

1. Mix all dry ingredients, then add the wet ones (you can alter the amount of liquids added, depending on your preferences regarding the texture of dough).
2. Preheat the frying pan with a small amount of oil.
3. Pour dough with a ladle onto the pan and fry pancakes from both sides. You can place them on paper towels later on, in order to remove the fat.

Enjoy!

Superfood mood-boosting vegan cookies

As you know, yesterday USA celebrated the  National Chocolate Chip Cookie Day (probably one of the best national food holidays, maybe except of National Whipped Cream Day and Ice Cream For Breakfast Day). Due to this how so important event, we connect with our American fellows by preparing those little black beauties - maybe not EXACTLY choco chip cookies, yet I believe a really nice (and healthy) variation of them. Vegan, gluten-, sugar- and guilty-free. Moreover, they contain the whole range of superfoods, which benefits are summarised below:

COCOA
One of its most appreciated values is the antidepressant effect, which is due to the presence of phenethylamine - a mood-boosting neurotransmitter. Cocoa is also the source of magnesium, essential for proper functioning of muscles and nerves). It is also rich in dietary fiber, improving digestion and, hence, beneficial in terms of weight loss.

GOJI BERRIES
They contain all of the essential amino acids, contain 15 times more iron than spinach and are loaded with vitamin C and dietary fiber. Moreover, goji berries have the highest protein concentration of all fruits - and these are only a few of their numerous health benefits! They really are superfoods, aren't they?

BANANAS
They contain tryptophan - amino acid which is turned into serotonin, a neurotransmitter responsible for good mood and happiness. They are also a source of vitamins and minerals: vit. B6, vit. C, magnesium, potassium and dietary fiber. Due to the presence of natural sugars (sucrose, fructose and glucose) they are perfect energy-boosters.

WALNUTS
Apparently, even though containing pretty large amount of kcal / 100g, walnuts aid in weight loss, as their consumption results in satiety. This is due to large amounts of fats, proteins and fiber they contain. They are also a great source of antioxidants, which prevent heart diseases, as well as of omega-3 fatty acids, which help in stress reduction and brain functioning. Eating walnuts also aids proper sleep, as they increase the amount of melatonin in your organism .

COCONUT OIL
The benefits of coconut oil surely need a separate post to fit in, but these are some of the most important (and interesting) ones: it helps fat burn (YES, we couldn't believe that either at first), prevents infections, reduces LDL (bad) cholesterol levels, increasing the level of HDL (good) cholesterol at the same.

Roasted, gluten-free and vegan doughnuts / Pieczone, bezglutenowe i wegańskie pączki

If you leave in Poland you have to know what Tłusty Czwartek is. If not then it's the best day in the year, you can eat a lot of sweet things and have no limit. Doughnuts are very popular during that day and therefore we tried to prepare slightly healthier version of them. At least they are not fried in oil but roasted! (They also are vegan and gluten-free) We hope you will enjoy them!

Merry Tłusy Czwartek! ღ

Ingredients
for ca. 25 doughnuts

Walnut cake with chocolate, without flour / Tort orzechowy z czekoladą, bez mąki

I finally have a moment to post a coverage from preparing a cake for my grandparents - according to the public eye, it was delicious! I discovered the recipe on White Plate, one of my favourite culinary web pages, you can find it here (it is only in Polish, unfortunately, but don't worry, I will translate it soon). I have to admit that there were almost no alterations required, my only note is that 250g butter for the cream is a bit too much, I'd rather put 150-200g. Apart from that little detail, I sticked to the recipe (which happens very rarely, to be honest). You can see the effects of my efforts below.

World's best and simplest brownie / Najlepsze i najprostsze brownie świata

It is not ONE OF the best cakes I have ever eaten. It is THE BEST cake I have ever eaten. Additionally, it so simple to make, that it is almost impossible to spoil it. Summing up: a perfect cake. Make it at least one, I am not joking. Although, frankly speaking, I do not think it will end just on one.

4. Add the melted chocolate and combine with eggs and sugar mixture.
5. Add flour, salt and stir once again.
6. Put cake mixture into a baking tray 20x30 cm size coated with butter or covered with baking paper.

Przepis znalazłam na jednej z moich ulubionych stron kulinarnych - Kwestii Smaku - a znajdziecie go tutaj.

Składniki

na ciasto
200 g gorzkiej czekolady
225 g masła
3 jajka
0.5 łyżeczki aromatu waniliowego
275 g drobnego brązowego cukru
135 g mąki bezglutenowej*
0.25 łyżeczki soli

do dekoracji
200 g czekolady deserowej
łyżka masła
ewentualnie złote kulki lub inne ozdoby

Przygotowanie

1. Piekarnik nagrzać do 160 stopni.
2. 200 g czekolady połamać i mieszając rozpuścić w rondelku razem z posiekanym masłem.
3. Jajka ubić z cukrem i wanilią na puszysto.
5. Dodać mąkę, sól i ponownie wymieszać.
6. Przełożyć do formy o wymiarach 20 x 30 cm wysmarowanej masłem lub wyłożonej papierem do pieczenia.
7. Wstawić do piekarnika, piec 30-40 min, odstawić do wystygnięcia.

It's almost Christmas! / Już prawie święta!

As we recently celebrated St. Nicolas Day, I decided to please my friends and family by gifting them with little homemade vanilla reindeers. Gluten-free of course. I found the recipe on one of my favourite culinary web pages - www.mojewypieki.com - although I altered it slightly, above changing the regular wheat flour into the one not containing gluten. The original recipe in Polish can be found here, below is my modified one. Without bragging, I have to admit Rudolfs turned out to be actually pretty good :)

Ingredients
for cookies

180 g butter
200 g cane sugar
350 g gluten-free flour*
2 eggs
2 tsp vanilla extract
pinch of salt

for decoration

1 package of chocolate M&M
1 package of gluten-free pretzels**
1 bar of dark chocolate

*for example that one
** for example these ones

Preparation

1. Put all ingredients into a vessel and mix until achieving an even mass.
2. Flour a breadboard, roll out parts of pastry and cut out circular shapes with a mould or a cup.
3. Put circles on a cookie sheet covered with baking paper.
4. Bake in 180 degrees for around 12-15 minutes.
5. After cookies are taken out and cooled down, decorate them with chocolate, M&Ms and pretzels.

Moreover, as part of the Secret Santa, I got a very "tasty" gift from my friend, a book with gluten-free recipes. Unfortunately, some of them contain meat, hence I will not be able to test all of them, although I recon the range of vegetarian content will recompense it fully. In the immediate future I will definitely publish the effects of working with the book - they will need to be translated, as they are originally written in Polish. Additionally, we are planning to focus on the Christmas menu right now, so you can expect some interesting posts.

2. Stolnicę obsypać mąką, rozwałkowywać ciastko partiami i wycinać kółka za pomocą foremki lub filiżanki.
3. Układać ciastka na blaszce wyłożonej papierem do pieczenia.
4. Piec w temperaturze 180 stopni przez ok. 12-15 minut.

Zapraszamy :)
