Szpinak z czerwoną fasolą i serem kozim

There's nothing to hide - I am officially addicted to spinach lately. It appears on my plate for breakfast, lunch, dinner, whenever I eat something actually. Below recipe is not the most revelatory or sophisticated, although it has two major benefits: it is very fast to prepare and very healthy at the same time. Inspired by the ongoing exam session, I decided that this five-minute salad can persuade a student (or just anyone suffering from chronic lack of time) to eat healthy and tasty meal at home, instead of buying junk food. I hope that you will like the recipe. You can also freely modify it (and share your version in a comment below, if you want). Bon appetit!

SWEET CHICORY WITH HONEY AND ORANGES

Follow my blog with Bloglovin

I have never been a fan of chicory as it can be very bitter at times, if I would eat it that would only be as an filling to a sandwich or a salad. Until my mom and I were very hungry but literally the only thing in the fridge was chicory. We decided to try and make something of it and hence after combining our knowlagde and inspiration found online - a sweeter twist on chicory has been created.
I know it might sound scary but trust me, it really is delicous. Now we often serve it when having guests and we always get questions on how is it made :) .

Protein sources in vegetarian diet / Źródła białka w diecie wegetariańskiej

I suppose every person who has ever tried vegetarian diet came across the concern of providing enough protein for their bodies. Moreover, I can bet that every regular vegetarian more than often hears that it is impossible to do that. Speaking on behalf of my fellow non-meat eaters and my own, I can assure you this is not true.

Apart from eating meat and fish, there are plenty other ways of including protein in our diet. Here are some products which provide it.

(the amount of grams of protein per 100g of a product)

Eggs (13g)

Tofu (8g)

Beans

Soybeans (raw: 36g, boiled: 17g), Chickpeas (raw: 19g, boiled: 9g), Black beans (22g), Green peas (raw: 5g, boiled: 5g), Quinoa (raw: 14g, boiled: 5g)

Nuts

Almonds (21g), Brazil nut (14g), Cashew (18g), Hazelnut (15g), Macadamia nuts (8g), Walnuts (15g)

Seeds

Sesame (18g), Sunflower seeds (21g), Pumpkin seeds (30g), Chia seeds (17g)

For comparison, beef (85g lean meat, 15g fat) contains 26g of proteins. As you can see, there are many healthy substitutions of meat, which can be easily added into your diet. What is more, many of them provide a lot of other elements, such as magnesium, phosphorus or iron (nuts, seeds) in quantities not available in meat products.

Stay fit!

Jajka (13g)

Tofu (8g)

Rośliny strączkowe

Soja (surowa: 36g, ugotowana: 17g), Ciecierzyca (surowa: 19g, ugotowana: 9g), Czarna fasola (22g), Groszek zielony (surowy: 5g, ugotowany: 5g), Komosa ryżowa (surowa: 14g, ugotowana: 5g)

Orzechy

Migdały (21g),  Orzechy brazylijskie (14g), Nerkowce (18g), Orzechy laskowe (15g), Orzechy makadamia (8g), Orzechy włoskie (15g)

Ziarna

Sezam (18g), Pestki slonecznika (21g), Pestki dyni (30g), Nasiona Chia (17g)

Ingredients

3 cups of oatmeal
3-4 bananas
1-2 tbsp of coconut oil
1 tbsp of flaxseed
1 tbsp of sunflower seeds
1 tsp of cinnamon
0.5 tsp of nutmeg

Preparation

1. Mix all of the dry ingredients in a vessel.

2. Skin the bananas and mash them with a fork or a blender.
3. Add mashed bananas and coconut oil to the vessel.
4. Mix everything together (you can use your hand).
5. Cover the baking sheet with baking paper or oiled foil (we used the second one).
6. Put the oatmeal-banana mass onto the baking sheet and form a rectangular shape of approximately 1.5-2 cm hight.
7. Bake for 25-30 min in 180 degrees.
8. Take the baking sheet out of the oven and, after cooling down, cut the baked mass into nice, rectangular bars.

This is a perfect solution when you are in rush in the morning and you don't have enough time for a proper breakfast or if you get hungry between meals. Putting one or two bars into your handbag can proven you from eating junk food suffused with fat, salt and sugar.

Enjoy!

Składniki

3 szklanki płatków owsianych
3-4 banany
1-2 łyżki stołowe oleju kokosowego
1 łyżka stołowa siemienia lnianego
1 łyżka stołowa pestek słonecznika
1 łyżka stołowa cynamonu
0.5 łyżka stołowa gałki muszkatołowej

Przygotowanie

1. Wymieszaj wszystkie suche składniki w misce.

2. Obierz banany i rozgnieć je za pomocą widelca lub blendera.
3. Dodaj rozgniecione banany i olej kokosowy do miski.
4. Wymieszaj wszystko razem (można użyć rąk).
